General Manager Leo Fonseca
brings more than 20 years of professional
food and management experience to Stephanies
on Newbury. In 1993, he earned his Associates
Degree in Culinary Arts from Newbury College
in Brookline, MA. After graduating, Leo
traveled extensively in Europe learning
the regional cuisines and cultures of
many countries, focusing mostly in Italy
and France.
He began his career at one of the country’s
most exclusive yacht clubs, The Eastern,
in Marblehead, MA. Starting as a dishwasher,
Leo worked through college as a line cook,
and was promoted to Executive Sous Chef
in charge of all kitchens by the time
he graduated. There he trained under renowned
chef Denise Kiburis who was recently named
Chef of the Year by Les Dames d’Escoffier.
Leo also worked as Executive Chef at The
Black Cow, one of the North Shore’s
best restaurants, and as First Cook at
the Ritz-Carlton Hotel, famous for culinary
and customer service excellence.
At Jacob Marley’s in Marblehead,
MA, Leo went from Executive Chef to General
Manager after two years. He was eventually
made Director of Operations for what was
a three unit company increasing sales
by over 30% in his time there with his
attention to detail and drive to succeed.
Leo moved on to follow a passion for
wine, working in sales and consulting
for Horizon Beverage and the Martignetti
Company. For four years Leo worked with
restaurants in Boston and the North Shore
creating wine lists, setting up inventory
management systems, and developing staff
training programs.
In 2003 Leo made a return to restaurants
when he was hired at Stephanies on Newbury.
He quickly moved up the ranks working
as a server, bartender, and Bar Manager.
As the General Manager, Leo is in charge
of overseeing all restaurant operations.
He is leading Stephanie’s towards
its best year ever, with projections of
up to 20% growth in his first year. Leo
currently resides in Boston, MA. |
