1 Qt canola oil for frying
2 C cornmeal
1 T flour
½ t baking soda
1 t baking powder
1 T light brown sugar
½ T salt
1 C buttermilk
1 egg, beaten
¼ C ®Cabot Habañero Cheddar
Cheese, shredded by hand
In a heavy bottomed pot, heat oil to °350.
Combine dry ingredients (including brown sugar)
in a bowl until evenly mixed. Beat egg and buttermilk
together and combine with dry ingredients, mixing
only until there are no visible lumps. Using two
spoons, carefully drop 1 inch dough balls into
hot oil and fry until golden brown and crispy
on the outside. This will take about 3 minutes.
Remove from oil with a slotted spoon or tongs
to a plate lined with paper towels to help remove
excess grease. Serve and enjoy.
